So what are we all cooking in our kitchens these days?
Ok so last night we went out for mexican and watched the fire crackers.
Tonight is Tofu burgers with home made peanut sauce and cut potato chips on the BBQ (Its Friday)
Oh yummmm! can you post the recipe? My 1 1/2 year old LOVES spinach and im hard pressed finding things to make with it that arent in pastry (cheese & spinach rolls, mushroom & spinach pie)

Cream of Apple and Celery Soup
This delicious apple and celery cream soup helps to prevent the development of cancer cells with the high quantity of fibers that its fruits and vegetables contain. Like the old adage says: “An apple a day keeps the doctor away!”
Summary
Preparation time: 30 minutes
Cooking time: 40 minutes
Serves 6
Ingredients
3 tablespoons (45 gr) of butter
2 leeks or onions, chopped
4 large cooking apples, peeled, cored and chopped
2 cups (500 ml) of diced celery
2 potatoes, peeled and diced
6 cups (1.5 L) of chicken stock
1 pinch of ground nutmeg
Preparation
In a saucepan, melt the butter over low heat.
Add the leeks or onions. Cover and cook for 5 minutes.
Add the chopped apples and celery. Cook for 5 minutes while stirring.
Mix in the potatoes, chicken stock and nutmeg. Add salt and pepper.
Bring to a boil. Allow to simmer for 30 minutes with the lid on. Liquidize in an electric blender.

Below is a very tasty and quick recipe.
Fresh chilled organic carrot sticks or celery sticks
2 organic Avocados - diced and mashed
2-3 tablespoons fresh lime juice
1/4 cup of minced cilantro
1 teaspoon cumin
1/4 to 1/2 teaspoon Celtic or Himalayan salt Dice avocado and add remaining ingredients. Mash a bit to achieve a creamy texture. Dip with carrot or celery sticks. Serves 2-4
