- Our feelings are communicating with the Universe to let us know what we're thinking. We're receiving frequencies from all things in the Universe to act on a special quest. We're holding this sustained thought so it is continually sent out into the Universe. It will magnetically attach itself to like frequencies, and then within seconds will send the reading of that frequency back to us through our feelings. We're feeling confident and sound academically, physically and mentally to create an alliance with like people. We're feeling good feelings, so the Universe is communicating good feelings back to us. We see the things that we want already ours and know that they will come to us at need. We will let them come. We will not fret or worry about them. "Italian Picnic"
Sicilian Sausage and PeppersThis variation of a well-loved Italian dish is alla Crivellaro: Spicy Italian sausage, sweet crisp peppers, onions and rich tomato sauce. The “Crivellaro” twist is the addition of eggplant, rasins, pine nuts and multi-colored bell peppers – pantry staples in a Sicilian kitchen. This savory and sweet dish will be a delightful change to the same old sausage and peppers at your next summer barbeque.4 servings
Ingredients
1 pound Italian sausage
3 tablespoons extra virgin olive oil
1 medium eggplant, diced
1 red bell pepper, julienned
1 green bell pepper, julienned
1 yellow or orange bell pepper, julienned
1 sweet onion, julienned
3 cloves garlic, sliced thin
2 tablespoons tomato paste
2 tablespoons water
2 tablespoons balsamic vinegar
2 teaspoons sugar, or more to taste
¼ cup white raisins
¼ cup pignoli (pine) nuts, toasted
Equipment
Grill or broiler, large non-stick skillet
Preparation
Prepare the Italian Hot Sausage links:
Heat the grill, or preheat the oven to 375°F. Cook sausage until nicely browned and cooked through. Remove the cooked sausage to a platter and keep warm by covering with aluminum foil.
Toast the pignoli:
Place the pine nuts in a dry skillet and heat over medium heat. Gently swirl them in the pan until they are nicely toasted and starting to develop some color. Set aside.
[Chef’s Note: Be extra careful when toasting any nuts, especially pine nuts, which are high in oil. They can go from nicely browned to black in a matter of seconds, so keep a close eye on them, and just when they’re a little under the color you want, take them off the heat and remove from the pan immediately.]
Prepare the eggplant, peppers and sauce:
Microwave the peppers and onions until soft (drain out the excess liquid). Put the eggplant cubes in a collander and sprinkle with sea salt. Apply a weight on top and let it drain into a soup dish. You'll acutally see the bitter liquid desolve from the eggplant. Heat a large non-stick skillet and add the extra virgin olive oil. Add the eggplant cubes to the oil and sauté until slightly browned. Add the peppers, onions and garlic and continue to sauté until all the vegetables are caramelized and softened.
Whisk the tomato paste with the water and balsamic vinegar, add to the pepper/eggplant mixture and mix well. Add the sugar and blend well. Remove from the heat and sprinkle in the raisins and pignoli nuts. Place along side of the sausage on the platter and serve.
[Chef’s Note: The peppers, eggplant and sauce mixture can be made ahead. As a matter of fact, it tastes better if the flavors have time to develop. Serve warm or at room temperature along with freshly grilled sausage and a crusty loaf of Italian bread.]

Thank you for the welcome! Sorry I didn't get back to you sooner, but I was away for the last 4 days ... short holiday with my mom down the Jersey shore to the very tip (Cape May). I too am of Italian heritage ... my grandmother hailed from a village outside of Naples. I was raised with the values of honor and respect being the most important things in life, which I carry with me daily. I believe we should treat others the way we want to be treated. I have always lived my life in this fashion and, amidst life's trials and tribulations, life has been good to me because I have been good to life! Keep in touch. Donna Marie

If I understand good you've meditarean blood :) Me too, my mother is italian from the south and from the north. I'm living in belgium and it's funny I was in Miami, Florida in june! A Little world he! I'll invite my mum to check out your recipes :)
