I was thinking taking photos at a traffic stop randomly and the colors of cars would be near each other beyond normal statistics of chance!

Personally, I am not sure if it matters to me whether or not LOA can be scientifically proven, but I do know of several people/books that seem to be exploring this.
LOA Author Pam Grout has two books called E-Squared: Nine Do-It-Yourself Energy Experiments That Prove Your Thoughts Create Your Reality and E-Cubed: Nine More Energy Experiments That Prove Manifesting Magic and Miracles is Your Full-Time Gig. These books contain "experiments" for people to try and prove that LOA works. :)
Another author that comes to mind is Dr. Joe Dispenza who has several books about how Mind Over Matter/the Placebo Effect/Epigenetics (which seem to be related to LOA) actually can change cells, hormones, and genes in the body. He has a team of researchers who do EEG brain scans, heartbeat and blood pressure, and other medical tests on people who use visualizations, LOA techniques, and meditation to change their bodies and lives. Similarly, I think any book that explores the Placebo effect is relevant, since placebo is basically believing something will heal and then it does.
Author Rupert Sheldrake has also explored other interesting and similar areas in his 3 books: Science and Spiritual Practices: Transformative Experiences and Their Effects on Our Bodies, Brains, and Health, Morphic Resonance: The Nature of Formative Causation, and The Sense of Being Stared At: And Other Unexplained Powers of Human Minds
Well to some degree, any study you do with LOA is going to be questioned no matter what the circumstances. So I suppose the first place to start is looking at why do you want to prove scientifically that the LOA works? I mean what difference will it make to your life and living? Often times, we do have thoughts about needing evidence but to some degree any test is always going to be considered circumstantial. Even from a scientific perspective it will be argued about to no end about its validation.
